When you make this creamed cauliflower it is a great idea to make more than you need. You can take half of the batch and put it in the freezer to have for another night. I love a cook once eat twice recipe. If you are adding this to the freezer, make sure it is in an airtight container or freezer bag. Be sure to label it so that you know what it is and when you made it. The creamed cauliflower will last about 6 months in the freezer.

Ingredients for Mashed Cauliflower with Cream Cheese
- cauliflower
- low sodium chicken (or vegetable) broth
- water
- light sour cream
- ⅓ less fat cream cheese
- onion powder
- garlic powder
- salt and pepper
How to Make Mashed Potatoes
Preheat the oven to 400 degrees. While the oven is heating, cut cauliflower heads to florets. Boil the cauliflower with the chicken broth and water until it is very soft. This is usually about 10 to 15 minutes. Stir occasionally.
Drain the cauliflower and return it to the pot. Mash well and stir in other ingredients.
Put the mashed cauliflower to a 1 1/2 quart baking dish or into mini casserole dishes. cover and bake for 20 minutes.
Creamy Mashed Cauliflower Recipe
Ingredients
- 1 head of cauliflower trimmed
- 1 cup Pacific® Organic Low Sodium Chicken or Vegetable Broth
- 1 cup water
- ¼ cup light sour cream
- 2- ounce ⅓ less fat cream cheese
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- salt and pepper to taste
Instructions
- Preheat oven to 400º F.
- Cut cauliflower heads to florets. Boil on medium-high heat with chicken broth and water until VERY soft (about 10-15 minutes), stir occasionally.
- Drain and return to pot. Mash well (to desired level of smoothness) and stir in remaining ingredients.
- Put into a round 1½ quart baking dish (I used mini-casserole dishes for picture purposes), cover and bake for 20 minutes.
